Amelia Salmon

As well as being a self confessed foodie and lover of good coffee, Amelia is the Director of Just Earth and has driven the transition from the old store to the cafe, Coffee Roastery and Hub space. Being passionate about food sustainability led to her notice a gap in the market due to a frustration with kids menus in most restaurants being full of low quality junk food items. 

Amelia's adult life began with campaigning and activism and she discovered community development practice along the way. Amelia is a co founder of SPIRAL Community Hub, a local community development cooperative. She is also a Co founder and now Chair of the Qld Social Enterprise Council (QSEC).  In her role with QSEC she is an advocate for the social enterprise sector across Qld and Australia. 

She has worked in community development practice, particularly community economic development for 20 years. Amelia worked in India for three years at Gram Vikas which runs a number of large scale community enterprises (as part of Australian Volunteers International). In Australia Amelia has worked for a number of successful social enterprises such as the Big Issue, and Mu’ooz Restaurant. She has completed a Master of Local and International Community Development (MSWAP), BA, Cert IV Workplace Assessment and Training, Cert IV Small Business Management and is currently completing an MBA. 

Amelia holds numerous Board position and has won a number of awards. She was most recently nominated for Pro bono Australia's top 25 Social Impact for 2016 awards. 

Leah Israel

Leah Israel

Leah Israel is the Head Chef at Just Earth and has more than 18 years in the Hospitality and Catering Industry. 

She was Head Chef in another 'farm to fork' Restaurant called Mates Gully.  Leah is passionate about food quality, nutrition and sustainability.

Leah and has worked in training and business development in hospitality focused social enterprise both in Australia and Uganda. 

Leah also spent a period of her career in France learning aspects of high end French Cuisine. 

When Leah is not cooking up a storm in the kitchen you may find her latin dancing or travelling the world.  

Molly Smith

Molly Smith

Molly is long time Barista and hospitality officionado. She is a practicing artist showing around Brisbane and completing a fine arts degree. 

Jerome Walker

Jerome Walker

Jerome is the executive assistant to the Director and has worked on numerous special projects in the start up phase of Just Earth including, IT, systems development, online store content development, supporting overall comms and events, and occasional dish scrubbing.

He has been involved in social enterprise for several years and according to him tragically addicted to coffee for much longer. 

He has studied politics and philosophy and lived in Japan. He is a keen writer and photographer and West End local.

Rebekah Clancy

Rebekah Clancy

Bek was the child always in trouble for not following a recipe or forgetting to grease the cake tin. She says "fortunately" she has progressed from these humble beginnings. "So between day dreaming about overseas escapades and creating an aromatic disaster zone in the kitchen, I find much joy in serving up your morning caffeine fix and satisfying culinary conquests." 

With a background in nutrition and dietetics and having grown up in many agricultural areas across the country she is passionate about facilitating ways for people to make healthy food choices that nourish the mind and body – yes that includes chocolate! Better yet, food choices that support local communities and a sustainable and responsible food system.


Rahul Kumar

Originally from Delhi, India Rahul Kumar started in the hospitality Industry in Australia as a kitchen hand and then began a chef's apprenticeship. He's been a fully qualified chef for eight years and has experience working in the smallest cafe's and some of Brisbane's leading restaurants. 

Tristyn Brandrick

Tristyn Brandrick is a first year apprentice chef at Just Earth. Tristyn is a brisbane local who graduated from Aspley High School and completed a Cert 2 in hospitality before joining us. Tristyn loves food and flavours and has proved himself to be a talent in our new fair food kitchen.

Shoal Laird Davis

Shoal Laird Davis

Shoal was a half way through a chefs apprenticeship when he decided to shift over to community work. His combination of hospitality and community based experience has made him perfect fit for Just earth.
